So last week I mentioned how I was working on my baking skills. I thought long and hard and realised that more than the birthdays which festoon the Spring for us, I wanted to celebrate something else. I wanted to celebrate the hard work towards AS levels, GCSEs, exams, dancing shows and gym competitions that has been going on here; girls helping others prepare, preparing themselves, revising, rehearsing, gritting their teeth and getting on.
But then yesterday was a terrible day where I shouted and growled and stropped with the best worst of them and by afternoon I really didn’t want to do anything. I’d shouted at my baby boy and was walking about with a thundercloud over my head.
Thankfully I needed to bake. So I did.
The boy and I bonded over baking, which was much needed after a fractious day of not really liking each other.
I ambitiously chose a raspberry and lemon cake recipe made with yoghurt (with Stork instead of butter)…
It looked very scrumptious while we were making it….
And when we sat down to tea that night and I told them why I had made it – to celebrate the amazing achievements of my hardworking, dedicated girls – I really had baked myself happy. And that was a big improvement on the morning.

I am horrible at baking but trying to get into it! 🙂 baby steps… is Stork an alternative to butter? I will have to check to see if we have that here in California!
